I hear that you are considering installing Extension:VisualEditor. I've never installed MediaWiki or anything similar, but I gather from the occasional question that the VisualEditor extension might not be documented as clearly in a few points as would be desirable. So while I definitely encourage you to try it out, you might want to make sure that you've got all the sub-pieces (especailly Parsoid and Node.js) in place, and scroll through the various talk pages for comments about installation problems. If you do run into problems, feel free to post on one of the talk pages and ping me. I won't be able to solve your problem, but I might be able to find someone who can.
The 2017 wikitext editor is VisualEditor's built-in wikitext mode (same toolbar, but you see the wikitext). On the Wikimedia Foundation's private wiki for staff, about 60% of edits these days are made in either VisualEditor's visual mode or VisualEditor's wikitext mode. I would not be surprised if the visual editor turned out to be fairly popular with some of your users.
