On my wiki, pan and zoom are not working on my installation either from Firefox or from Edge.

pan: right key hold and move
- just provides camera rotate here
zoom: mouse wheel, hold wheel and move, pinch
- just provides camera rotate here; pinch doesn't work from phone either

I've added new options "zoom" and "pan" to v1.3, so you can enable these features on your MediaWiki instance
