Language List Source

I am wanting to reuse this implementation of a language box on my Wiki, and I am wondering about the source of the language names (e.g., when Main_Page/zh is created, "中文" is added to the language list). I can see that the list of accepted ISO codes is in Template:Languages, but I can't figure out how "zh" is transformed into "中文". If I wanted to add items to that list, or modify it, how could I do that?
